Mindful Bites and inVOLVed Lifestyle Services Set to Open in Late Spring 2025, Bringing a Fresh Approach to Nutrition, Health & Wellness in Dubuque


Dubuque, IA – February 2025 – Kim David, Owner of Volv Fitness and Founder of The Crocus Foundation, announces the opening of Mindful Bites and inVOLVed Lifestyle Services in the Dupaco Voices Building at 1000 Jackson Street. Mindful Bites, a nutrition eatery and resource center, will begin

construction in February 2025, with an anticipated grand opening in late spring. The eatery will offer fresh smoothies, pressed juices, wholesome snacks, and whole-food grab-and-go meals, providing a convenient option for those seeking nutritious and delicious food choices.


A Vision for Community Wellness

Mindful Bites and inVOLVed Lifestyle Services are more than just an eatery—they’re a hub for education, community engagement, and health coaching. With a mission to inspire and empower individuals to make informed dietary choices, the establishment will offer high-quality, nutrient-rich foods, along with nutrition

coaching, educational programs, and wellness events. Nutrition plays a key role in cancer survivorship, and Mindful Bites will emphasize its importance. Studies

show that a balanced, nutrient-rich diet can enhance recovery, boost immune function, and improve overall well-being for cancer survivors. As the founder of The Crocus Foundation, a nonprofit dedicated to supporting individuals affected by cancer, Kim David and her team are passionate about integrating evidence-based nutritional guidance into Mindful Bites, ensuring those on a healing journey have access to the resources they need to thrive. “We believe that a healthy lifestyle should be accessible, convenient, and enjoyable,” said Kim David, founder.

“Our goal is to create a welcoming space where people can nourish their bodies and minds while gaining valuable knowledge on how to lead healthier lives.”


A Growing Demand for Nutritious Options

Chronic diseases—such as heart disease, diabetes, and obesity—are largely preventable through a healthy diet and lifestyle. Studies show that up to 80% of heart disease and stroke cases, and 90% of type 2 diabetes cases, could be prevented with healthy food choices, regular physical activity, and weight management (Source: CDC, American Heart Association).For cancer survivors, maintaining a balanced diet and regular physical activity can reduce the risk of recurrence, enhance physical function, and improve emotional well-being. Research indicates that proper nutrition can lower the risk of cancer recurrence by up to 40%, while exercise can significantly boost quality of life (Source: American Cancer Society). In addition to promoting wellness, a long-term goal for Mindful Bites and inVOLVed Lifestyle Services is to actively participate in hunger outreach and food justice efforts within the community. We are committed to ensuring that all individuals, especially those affected by chronic illnesses, have access to nutritious food and resources to support healthy living.


Strategic Location & Community Integration

Situated across from Volv Fitness in the Historic Millwork District, Mindful Bites and inVOLVed Lifestyle Services are ideally located to attract not only fitness enthusiasts and health-conscious individuals but also those working toward a healthier lifestyle. The business will partner with local organizations and

producers, while incorporating an indoor hydroponic garden to provide the freshest produce.


A Unique and Purposeful Experience

Unlike traditional smoothie and juice bars, Mindful Bites and inVOLVed Lifestyle Services will feature an open kitchen concept, a resource library lounge, and an innovative programming schedule. While the primary food service hours will be 6:30 a.m.– 3:30 p.m., the space will be utilized in the evenings and weekends for cooking classes, educational seminars, guest speakers, and special events.


Looking Ahead

Mindful Bites and Lifestyle Services will launch in phases, starting with smoothies, bowls, juices, salads, and soups, and eventually expanding to healthy sandwiches and full meal options. All phases will include access to educational resources and nutritional services. “We are thrilled to bring this concept to life and are excited to make a meaningful impact on the health of our community,” said Kim David.
